On Thursday, Tyson introduced ¡Yappah! protein crisps. The No. 1 ingredient, as stated front and center on the package? Upcycled chicken breast, otherwise known as the trim leftover from producing chicken tenders at times.

In fact, more than half of the ingredients in the product are products that might otherwise have gone to waste. In addition to the chicken, the crisps use near-expiration vegetable puree for certain flavors and spent brewer grains from partner Molson Coors for others.

Upcycling creates a higher-value or higher-quality product than the original, which in food often means byproducts or food that would not have been used. It has become a key opportunity area for more fully utilizing our food supply in a way that’s profitable. You can now find products that make use of the byproduct of soymilk production, overripe bananas or the fruit that grows around the coffee bean.
